Upside-Down Lemon Meringue Cups
With just four ingredients, these pudding pops are super cute. Use them as table décor or stocking fillers.
Ingredients
Makes 4-5 cups
- 2 packets (150g each) Beacon mmmMallows Guess the flavour
- 1 tsp (5ml) vanilla essence
- 1 packet (80g) lemon jelly
- ⅘ cup (200ml) boiling hot water
- 1 cup (250ml) shop-bought lemon curd
- 1 packet (200g) Marie Biscuits or Tennis biscuits, finely crushed
- ⅖ cup (100g) butter, melted
- Mint, for decorating (optional)
Method

Melt marshmallows in a pot for 1–2 minutes (or in a large bowl in the microwave for 2–3 minutes, stirring at one-minute intervals).

Stir in vanilla essence.

Spoon or pipe mixture into 4–5 glasses. Set aside to cool.

Mix jelly powder and hot water, whisking to dissolve granules completely.

Whisk lemon curd into jelly mixture.

Pour a layer of the jelly mixture on top of set marshmallows, diving evenly among glasses.

Chill in the fridge for about 2 hours, or until completely set.

Combine crushed biscuits and butter.

Serve glasses sprinkled with biscuit crumble and mint, if you like.
