Posh Nosh Burnt Caramel Hot Chocolate recipe


  • 1 x 500g Golden Cloud Chocolate Cake Premix
  • ¼ cup (60ml) brown sugar
  • 1 Tbsp instant coffee
  • ½ cup (125ml) melted butter
  • 1 egg
  • 2 egg yolks
  • ⅓ cup (80ml) water
  • 3 x 80g Heavenly Milk Chocolate
  • flaked salt

  • Caramel sauce:

  • 1 x 125g Toffchoc Original
  • ½ cup (125ml) cream or milk


  1. Preheat oven to 160°C and line a 30 x 20cm baking tray with baking paper.
  2. Combine Golden Cloud Chocolate Cake Premix, icing mix, sugar and coffee.
  3. Combine butter, eggs, water and add to dry ingredients until well combined. Be careful not to overmix.
  4. Roughly chop two Heavenly Milk Chocolate bars (see Cook’s Note) and fold through brownie batter.
  5. Spoon into prepared tray and spread evenly.
  6. Break the remaining chocolate into blocks and gently nestle them into brownie batter.
  7. Bake for 30-35 minutes. Allow to cool completely before cutting into 16 squares.
  8. Combine Toffchoc Originals and cream in a saucepan over medium heat to make the caramel sauce.
  9. Stir until melted and well combined.
  10. Serve brownies drizzled with caramel sauce and a sprinkle of salt.


Cook's note:

Coat the chopped chocolate in 1 Tbsp (15ml) flour before adding to the batter. This prevents the chocolate from sinking to the bottom as it bakes.
