Easy mmmMallow Eton Mess
An easy, show-stopping dessert that’s perfect for the summer days ahead.
Ingredients
For the white mousse
- 200g Beacon white mmmMallows
- 2 Tbsp (30ml) milk
- 1 slab (80g) Beacon Ivory Cream, melted
- 1 cup (250ml) cream, whipped
For the pink mousse
- 200g Beacon pink mmmMallows
- 2 Tbsp (30ml) milk
- 1 slab (80g) Beacon Ivory Cream, melted
- 1 cup (250ml) cream, whipped
To assemble
- 4 meringue nests, broken into chunks
- Handful fresh berries
- Fresh mint for serving
- Four short, clear glasses to serve
Method
- Place the white mmmMallows and milk into a large bowl and microwave for approximately 8 minutes or until melted.
- Remove from the microwave, whisk vigorously until smooth and allow to cool slightly.
- Add white chocolate to a large bowl and stir through melted mmmMallows.
- Fold in the whipped cream until well incorporated and refrigerate until firm.
- Repeat the above process for the pink mmmMallow mousse.
- To assemble, place meringue chunks at the bottom of each glass along with some berries.
- Top with white mousse, more meringue, pink mousse and more berries.
- Repeat this process until the glass is full and the layers clearly visible.
- Top with the extra berries and fresh mint.
- Serve immediately.
