Chocolate Egg Roll

Serve this cake immediately after adding filling for best result. If you need to make it in advance, we suggest you fill the cake and tightly wrap in clingfilm to hold its shape. Simply unwrap, pour over melted chocolate and decorate before serving.


Ingredients

Method

  1. Preheat oven to 180°C.
  2. Line a 38cm x 20cm deep sheet tray tin with baking paper and spray with nonstick spray.
  3. Spoon prepared batter into tray and spread out evenly.
  4. Bake for 30–35 minutes, or until a skewer inserted in the centre of cake comes out clean. Remove and cool for 3–5 minutes.
  5. Roll cake into a log while warm. To do this, lift up the baking paper on one short end of the rectangle and roll the cake towards the other short end. Leave to cool completely in this shape.
  6. Melt chocolate in the microwave for about 1–1½ minutes, stirring every 20 seconds, until smooth. Set aside to cool at room temperature.
  7. Unroll log once cool and spread layer of caramel on the top of cake.
  8. Place Beacon mmmMallows Guess the Flavour in a large microwave-safe bowl. Microwave for about 1–2 minutes, stirring every 30 seconds, until completely melted.
  9. Stir melted marshmallows to deflate and create a smooth mixture. Spoon into a piping bag.
  10. Pipe a 2–3cm-thick line of melted marshmallow on the right-hand short end of the cake. (This will become the centre of your log cake.)
  11. Roll cake back up into a log, starting from the right-hand side, and place seam-side down on a serving plate.
  12. Pour melted chocolate over cake.
  13. Top cake with Hens Eggs, Strawberry Whippy marshmallow eggs and edible shimmer (if using).
  14. Serve garnished with berries and mint.
