mmmMallow Cutout Cookies
We’ve found the ultimate melt-in-your-mouth cookie recipe that looks impressive but is surprisingly easy to make. It’s bound to be a hit at birthday parties, picnics or any other occasion!
Ingredients
Makes 12-16 cookies (6-8 sandwiched cookies)
- 1 box (500g) chocolate cake mix
- 1 slab (80g) Heavenly Milk Chocolate, chopped
- 1 egg, whisked
- ¾ cup (180ml) vegetable oil
- 2 packets (150g each) of Pink and White mmmMallows, separated
- 2 Tbsp (30ml) golden syrup
Method
- Preheat oven to 180°C and line two baking trays with baking paper.
- Combine cake mix, chocolate, egg and vegetable oil.
- Rest cookie dough in the fridge for 20-30 minutes.
- Scoop about 2 Tbsp (30ml) portions of the dough and gently form balls (or use an ice cream scoop).
- Arrange on a baking tray, leaving a 2cm gap between each ball.
- Bake for 10-12 minutes.
- Using a heart-shaped cookie cutter, cut out the centre of only half the cookies while they are still warm.
- Allow to cool completely on a wire rack.
- Melt pink and white mmmMallows separately in the microwave with 1 Tbsp syrup each for 15-second bursts, stirring continuously.
- Stir until completely melted before transferring into a piping bag.
- Pipe mmmMallow mixture onto the bottom of a solid cookie and sandwich closed with a cut-out cookie on top.
- Repeat with remaining cookies and mmmMallow mixture. Serve warm.
