Rainbow Treat pops

Birthday parties always call for Rice Krispie treats, and this recipe is guaranteed to keep the kids busy!


Rainbow rice krispies

Ingredients

  • 400g Beacon Pink & White
  • 5½ Tbsp (5ml) butter
  • 6 cups Rice Krispies cereal
  • ½ tsp red food
  • ½ tsp orange food colouring
  • ½ tsp yellow food colouring
  • ½ tsp green food colouring
  • ½ tsp blue food colouring
  • ½ tsp purple food colouring
  • 80g slab Beacon Heavenly Ivory Cream chocolate, melted
  • 2x 100g packets Beacon Jelly Tots, sorted by colour
  • 2x 150g packets Beacon Mini Liquorice Allsorts, sorted by colour
  • Ice-cream sticks

Method

  1. Line a baking tin (22cm x 15cm x 5cm) with baking paper. Set aside for later.
  2. Put the Beacon mmmMallows and butter in a large microwave-safe bowl. 
  3. Microwave on high in 30-second increments, stirring after each, until mmmMallows and butter are melted and combined.
  4. Divide the mixture equally into 6 medium-sized bowls.
  5. Tint each mixture using the different food colouring, mix well until bright.
  6. Reheat melted marshmallow mixes for 20 seconds in the microwave.
  7. Add 1 cup Rice Krispies to each colour marshmallow mix and combine well.
  8. Fill the baking tin with each colour, starting with the red row, orange row, yellow and so on until you have the rainbow.
  9. Set in the fridge for at least 30 minutes.
  10. Sort the Beacon Jelly Tots and Beacon Liquorice Allsorts into their different colours that match the rainbow colours.
  11. Cut the rainbow Rice Krispies into eight rectangles, with three colours for each pop.
  12. Use a sharp knife to make a small cut into the bottom. Carefully skewer an ice-cream stick into the base of each rainbow Rice Krispies Pop to resemble an ice-cream.
  13. Melt Beacon Heavenly Ivory Cream chocolate to use as a “glue” to stick down the sweets.
  14. Mix and match a Jelly Tot or Mini Liquorice Allsort to the same colour layer of Rice Krispies Pops. For example, place blue Jelly Tots on the blue Rice Krispies layer, and so on. 
  15. Get the kids involved in decorating their own Rainbow Treat Pop.
