Microwave Mug Cakes 3 Ways
There's nothing better than a cake baked in a mug in the microwave. These three decadent recipes will heat up your winter and satisfy your sweet tooth.
Makes 3 each
For the cake batter:
- 1 cup (250ml) cake flour
- ½ tsp (3ml) baking powder
- ½ tsp (3ml) bicarbonate of soda
- 3 Tbsp (45ml) cocoa powder
- Pinch salt
- ¼ cup (60ml) castor sugar
- 2 jumbo eggs, whisked
- 2 Tbsp (30ml) melted butter, cooled (canola oil works well too)
- ½ cup (125m) buttermilk (cream or milk works well too)
- Combine dry ingredients, sift as needed to avoid lumps.
- Whisk eggs, butter and buttermilk together. Whisk the wet ingredients into dry mixture to create a smooth batter.
- Divide into 3 mugs or microwave-safe bowls and decorate as you wish with below flavours.
For the chocolate hidden centre cakes:
- 1 Tbsp (15ml) coffee granules, mixed with 3 Tbsp hot water
- 9-12 Beacon Selection of Milk or White chocolates and Pralines
- Ice cream, for serving
- Press 2 chocolates and/or pralines into the centre of each mug.
- Microwave each mug or for 2-3 minutes or until the outside is cooked.
- Remove and serve while hot with a scoop of ice cream.
For the chewy nougat nut cake:
- ½ slab (40g) Damascus Nougat, cubed + extra for topping
- Handful of almonds or hazelnuts, toasted and chopped
- Stir cubed nougat and chopped nuts into each mug.
- Microwave each mug or for 2-3 minutes or until the outside is cooked.
For the S'more mug cake:
- 1 slab (80g) Beacon Dark Chocolate, melted, for serving
- 6-9 Beacon mmmMallows Strawberries & Cream Twisters Mallows
- 1-2 digestive or Marie biscuits
- Microwave mug cakes one at a time for 2-3 minutes or until the outside looks cooked.
- Remove and cut a hole in the centre. Pour 1/3 of melted chocolate in the hole, then place 2-3 marshmallows loosely on top.
- Microwave for a further 30-45 seconds until marshmallows are well risen.
- Serve immediately.
